Spicy Garlic Soy Marinated Soft-Boiled Eggs (Mayak Eggs)

If you love eggs with rich, jammy, custard-like yolks, this recipe is going to be your new staple. These Spicy Garlic Soy Marinated Soft-Boiled Eggs (inspired by Korean Mayak Gyeran, or "drug eggs" because of how addictively delicious they are) are one of the simplest yet most rewarding side dishes you can keep in your fridge.
I was originally inspired by the recipe in Jennifer Fisher's book Trust Your Gut. I made a few modifications to suit my taste and routine—adjusting the garlic, scallion, and chili balance, tweaking the sauce proportions, and dialing in the 6-minute boiling time for that perfect custard-like center.
Steeping perfectly soft-boiled eggs in a savory bath of soy sauce, minced garlic, crisp scallions, toasted sesame seeds, and a hint of chili infuses the egg whites with deep umami while keeping the yolks creamy and decadent.
They are incredible served cold alongside cauliflower rice, paired with sour and spicy kimchi, dropped into a hot bowl of soup, or simply grabbed straight from the fridge for an instant, nutrient-dense protein snack.

- 6 large eggs (room temperature or straight from fridge — see boiling tip)
- ½ cup water (120 ml)
- ½ cup light soy sauce (120 ml, or tamari / coconut aminos if gluten-free or strict soy-free)
- 1 clove garlic, finely minced
- 2 scallions / green onions, thinly sliced
- 1 tsp toasted sesame seeds (a mix of black and white sesame seeds looks gorgeous)
- ½ tsp coarse sea salt (plus a pinch for serving)
- Chili flakes or chopped fresh red chili, to taste (optional for heat)
Equipment
- Medium pot for boiling eggs
- Stainless Steel Spider Strainer / Slotted Spoon
- Large bowl filled with ice water (crucial for stopping the cook immediately)
- Glass container or airtight container that snugly fits 6 eggs
Step-by-Step Instructions
1. Boil the Eggs to Jammy Perfection (6 Minutes)
Bring a pot of water to a rolling boil over medium-high heat.
Gently lower the eggs into the boiling water one by one using a spider strainer or slotted spoon to prevent the shells from cracking. Boil for exactly 6 minutes for soft, luscious, jammy yolks.
As soon as the timer goes off, immediately transfer the eggs into an ice water bath. Let them chill thoroughly for 5–10 minutes. Once completely cooled, gently tap the shells all around and peel them under cool water.
2. Prepare the Garlic-Soy Marinade
In a medium airtight glass container or deep bowl, combine:
- ½ cup water (120 ml)
- ½ cup light soy sauce (120 ml)
- 1 clove minced garlic
- Sliced green onions
- 1 tsp toasted sesame seeds
- ½ tsp coarse salt
- Crushed chili or sliced chili pepper (adjust to your spice tolerance)
Stir everything well until the salt dissolves and the aromatics are evenly distributed.
3. Submerge the Peeled Eggs
Gently place the peeled soft-boiled eggs into the marinade.
Try to choose a container where the eggs sit snugly so they are as submerged as possible in the liquid. The aromatics, sesame seeds, and scallions will naturally float and blanket the top of the eggs.

4. Chill & Marinate (6 Hours)
Snap the airtight lid tightly onto your container. Place it into the refrigerator and let the eggs marinate for about 6 hours (see pro-tips below on timing).
Halfway through the marinating time (around the 3-hour mark), you can gently roll or flip the eggs over to ensure the color and savory flavors soak in evenly on all sides.
Seal with an airtight lid and refrigerate for 6 hours.
5. Slice & Enjoy!
Once marinated, remove the eggs and discard the marinade (or save a spoonful to drizzle if you like).
Using a sharp knife (or a piece of unflavored dental floss for a razor-sharp cut), slice each egg in half to reveal the gorgeous, golden jammy center.
Pro-tip: For the ultimate bite, sprinkle just a tiny pinch of flaky sea salt directly over the egg yolk right before serving. The contrast between the chilled, savory whites and the velvety yolk is out of this world!

Pro-Tips for Success
- Don't Over-Marinate (6 Hours is Best): When using standard light soy sauce, 6 hours is the sweet spot. Try not to exceed 8 hours. Leaving them in the marinade for 24 hours will pull too much moisture out of the yolks and make the whites overly salty (tested firsthand!).
- Flip Once Halfway: Turning the eggs once around hour 3 helps them take on an even golden-brown color and uniform seasoning.
- Storage: Keep the finished eggs in a clean, covered container in the fridge without the liquid. They will stay fresh and delicious for up to 3 days.
- Serving Ideas: Serve chilled as a standalone high-protein snack, alongside steamed cauliflower rice, paired with homemade kimchi or pickled cucumbers, or as a topping for low-carb noodles.
